Tupí

Tupí ist eine Käsespezialität aus den katalanischen Pyrenäen in Spanien. Für Tupí wird Käse aus Schafs-, Ziegen- oder Kuhmilch mit Schnaps (span. Aguardiente aus agua = Wasser und ardiente = brennend) oder Likör und ggf- Milch und Olivenöl vermischt und dann in einem kleinen geschlossenen Tontöpfchen fermentiert. Tupí hat damit Ähnlichkeit mit dem farnzösischen Fromage Fort, der ähnlich hergestellt wird. Tupí hat seinen Namen von dem kleinen Tontöpfchen in dem er reift und das auf Katalanisch Tupí oder Tupina genannt wird.
